Tasty Chicken & Zucchini Pops

When you are on a restricted diet, whether it is due to intolerances or when trying to lose weight, it can be difficult to find new, interesting recipes to try. I mean, there are only so many times you can eat a salad or plain chicken before getting bored. Why not ditch the boring, plain chicken and try out these delicious chicken and zucchini pops? They are not only super healthy but gluten free, diary free, paleo diet and Whole30 diet friendly! If you haven’t heard of Whole30 it is essentially a 30 day detox plan in which you only eat super healthy food to help rid yourself of food related health issues and helps break naughty habits.

These two ingredients work really well together as the juiciness of the zucchini stops the chicken from becoming dry. Many people are put off zucchinis because of the texture but when grated this disappears; so even if you are not usually a fan these are still worth a taste.

They are really easy to make and can be pan fried or baked depending on your preference. The dish is great as a starter or side dish but works equally well as buffet finger food. To accompany them you could try guacamole, salsa or any tomato based sauce. They are also the perfect accompaniment to sweet potato fries.

Serves: 4

Variations
Avocado oil, coconut oil or ghee can be used instead of olive oil. If you are not a fan of cilantro you can swap it for basil.

Note: At the first stage when mixing ingredients together do not worry that the mixture is wet. It is supposed to feel wet at this stage. Don’t be tempted to wring out the extra moisture from the zucchinis as this is what keeps the pops nice and juicy.

Tasty Chicken & Zucchini Pops November 19, 2014 Ingredients:

1lb of ground chicken breast

2 cups of unpeeled, grated zucchini

2-3 sliced green onions

3-4 tbsps of minced cilantro

1 clove of garlic

1 tsp salt

½ tsp pepper

Olive oil

½ tsp cumin (optional)

Instructions:
  1. Mix the chicken together with the zucchini, green onion, garlic, cumin, salt and pepper

Option 1 – Pan Fry

  1. Heat just a drizzle of olive oil in a pan over a medium heat.
  2. Place pops into pan and cook for around 5-6 minutes before flipping and cooking for a remaining 4-5 minutes. They will be ready when cooked through and golden brown.

Option 2 – Bake

  1. Drizzle olive oil onto a baking tray
  2. Place pops onto greased tray and drizzle with a little more oil.
  3. Bake at 400F for 20-25 minutes or until cooked through
