Sweet Potato Pie Waffles

Waffles are a treat that everyone enjoys and these low carb, gluten free waffles mean you can enjoy them without feeling too guilty! You may think the use of sweet potato would make them sweeter than regular waffles but in fact they work equally well with toppings sweet or savoury. For those craving a sweet treat can dust them with icing sugar or drizzle with maple syrup. Alternatively, if you are looking for a savoury snack you could eat them with ham and cheese; they work with nearly everything!

The recipe makes on average 14 waffles but don’t worry if that sounds like too many as they freeze well. From the freezer, simply pop them in the oven or the toaster for a couple of minutes and they are ready to go. For waffles that are a bit different (and use up unwanted sweet potato!) give these a go. At just 127 calories each it would be foolish not to!

Sweet Potato Pie Waffles February 20, 2015 Ingredients:
  • 1 cup mashed sweet potato
  • 1 ½ cups gluten free flour
  • 2 tsps baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 tsps pumpkin pie spice
  • ½ tsp ground cinnamon
  • ¼ tsp fresh grated nutmeg
  • 2 tbsps brown sugar
  • 2 tsps vanilla extract
  • 2 large eggs, separated
  • 5 tbsps melted butter
  • 4 tbsps maple syrup
  • 1 ¼ cup milk
Instructions:
  1. Preheat your waffle iron to the regular setting.
  2. In a bowl, sift together the flour, baking powder, baking soda, sugar, spices and salt. Set aside for later.
  3. In another bowl, whisk the egg yolks with the mashed sweet potato, milk, vanilla extract and maple syrup until you have a smooth consistency.
  4. Pour the dry ingredients you set aside earlier into the mixture and stir gently. When the mix begins to combine add the melted butter and then continue stirring until fully combined.
  5. Using a big bowl and mixer with whisk attachment, whip the egg whites with a small pinch of salt. Starting on a low speed, gradually increase to medium speed and whisk for around 5 minutes or until soft peaks are formed.
  6. Fold the whisked egg whites into the batter being careful not to mix all the way through.
  7. Scoop the batter into your waffle iron and cook in batches as the directions indicate on the waffle iron.
  8. Serve with desired toppings.
