Cream Cheese Filled Banana Bread

Banana bread is delicious. Fact. Cream cheese is delicious. Fact. A dish combining the two results in a tasty treat that the whole family will think is delicious. I have always liked banana bread but when I came across this recipe incorporating soft cream cheese, it was a revelation! The layer of cream cheese makes it taste almost like a banana cheesecake and as for the texture the cheese keeps the bread soft and moist.

It is not difficult to make as all the ingredients are easily whisked. Even including the time it takes to cool you can go from laying out ingredients to treating yourself to a slice in less than two hours.

The coconut oil adds a slightly sweet taste which is lovely but vegetable oil can be used instead. You can also use Greek yoghurt instead of sour cream if you would prefer.  The sour cream (or yoghurt) keeps the bread soft and fluffy. Make sure the bananas you use are nice and ripe.

Treat yourself to a slice as an afternoon snack or serve as a dessert. Whenever you decide to eat this cream cheese filled banana bread you are sure to enjoy it – and that’s a fact!

Cream Cheese Filled Banana Bread January 28, 2015 Ingredients:

For bread

  • 1 large egg
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup coconut oil
  • ¼ cup sour cream
  • 2 tsps vanilla extract
  • 2 large ripe bananas, mashed
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda

For cream cheese filling

  • 1 large egg
  • 4oz soft cream cheese
  • ¼ cup granulated sugar
  • 3 tbsps all-purpose flour
Instructions:
  1. Preheat oven to 180C. Grease a loaf pan measuring 9 x 5 inches.

Bread

  1. In a big bowl add the egg, brown and granulated sugars, sour cream, coconut oil and vanilla extract. Whisk until all ingredients are combined.
  2. Stir in the mashed bananas.
  3. Add in the flour, baking soda and baking powder and gently stir in until combined. Be careful not to over mix.
  4. Pour 2/3 of the batter into the loaf tin, spreading it smooth across the top. Set aside for later.

Filling

  1. In a big bowl add the egg, cream cheese, sugar and flour and whisk to combine.
  2. Pour this mixture, evenly, over the batter you set aside earlier. Smooth it with a spatula making sure it reaches all the sides and corners.
  3. Top with the rest of the bread batter and smooth the top. Be careful not to squash the cream cheese layer.
  4. Bake in the oven for between 45 to 50 minutes. Cooking times can vary so if you are not sure if the bread is done, stick a toothpick into the top and if it comes out clean then it’s ready.
  5. When removed from the oven, allow to cool in the pan for 15 minutes. Then turn out onto a wire rack and leave to cool completely. Cut into slices and serve.
