There is a lot of hype these days about superfoods but what exactly are they? A superfood is one packed with nutrients that are good for your health. Now, I don’t know about you but anytime I hear about something that is really healthy I automatically think that it probably doesn’t taste that good. However, with this dish at least, I have been proven completely wrong. This salad is full of superfoods and is delicious!
It is not only tasty but SO good for you. The beets and sweet potato are full of essential vitamins and the hemp seeds are full of magnesium and omega 3. In this salad you can either have the beet and sweet potato roasted and cubed or raw and shredded. As for the greens you can choose whatever you fancy but some good suggestions are romaine lettuce, kale and baby spinach.
The balsamic vinaigrette that accompanies the salad tastes especially good on fresh, crisp greens and is really simple to make. You just throw all the ingredients into a bowl and whisk together.

- 1 large sweet potato
- 1 large beet
- 4 cups of greens
- ½ avocado, sliced
- 2 tbsps hemp seeds
- 2 tbsps walnuts
- 1/3 cup olive oil
- 2 tbsps balsamic vinegar
- ½ tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tbsps lemon juice
- ¼ tsp Dijon mustard
- In a large salad bowl throw in all your greens and place the pieces of sweet potato and beet on top.
- Add in the sliced avocado, walnuts and hemp seeds.
- To make the balsamic vinaigrette, place in a bowl the olive oil, balsamic vinegar, red wine vinegar, garlic, lemon juice and Dijon mustard and whisk all the ingredients together.
- Drizzle vinaigrette over salad as desired and serve.
