Garlic Parmesan Roasted Potatoes

Potatoes are considered as a comfort food whether they are baked, mashed or roasted.  Today, it is one of the most popular vegetables in the world and an important food staple.  They are available throughout the year.  Potatoes offer a number of health benefits as well.  Because they are so popular and tasty, we have decided to make something delicious out of them.

Potatoes don’t take a lot of time to cook and roasting them is a better alternative to frying and therefore our recipe for today is Garlic Parmesan Roasted Potatoes.  Who has not heard about the health benefits of garlic and when they are included in the meals, they don’t only increase the nutritional value of the meals, but they also add flavor to the meals making them tastier.

Parmesan cheese is one of the tastiest cheeses available and although they may not be in the good books of many, they add taste and texture to our roasted potatoes.  Because too much of anything can be unhealthy, we have decided to use only a small amount of cheese in our recipe.

Once you taste this dish, you will surely forget about all other things.  When done correctly, they are crispy, tender and buttery.  Fragrant herbs and parmesan cheese add all the seasoning and flavour you need in a perfectly roasted dish.  If you are a cheese lover, feel free to add extra cheese on top.  Although a little unhealthy, but it will make your potatoes tastier than ever.

Another good thing about this dish is that we have not taken the skin off the potatoes before roasting them.  Potatoes with skin on top provide a good source of potassium which helps maintain blood pressure.  Most people believe that potatoes do not contain any other vitamins and minerals. The truth is that potatoes with the skin on are also a good source of dietary fiber, vitamin C and vitamin B6.  There are nine other minerals and vitamins which are contained in potatoes, but in small amounts.   In addition, potatoes do not contain empty calories.  The caloric content of potato dishes increases with your choice of toppings and side dishes.  Therefore, you can always opt for health alternatives to go with your potatoes dishes.  These can include steamed vegetables, salsa and even low fat sour cream.

Garlic Parmesan Roasted Potatoes go great with just anything.  You can even take few slices of garlic bread, toasted bread, bun or a bowl of pasta.   These yummy potatoes are great for any season.

Servings: 6

Preparation time: 10 mins

Cooking time: 30 mins

Total time: 40 mins

 

Ingredients

  • 3 pounds red potatoes, cut into halves
  • 5 cloves minced garlic
  • 2 tbsp olive oil
  • 1 tsp thyme, dried
  • ½ tsp basil, dried
  • ½ tsp oregano, dried
  • 1/3 cup parmesan cheese, grated
  • Black pepper and salt to taste
  • 2 tbsp unsalted butter
  • 2 tbsp parsley, chopped for garnishing

Instructions

  1. Take a baking sheet and lightly oil it.
  2. Preheat over to about 400 degrees F.
  3. Place potato halves onto the prepared sheet, add herbs and sprinkle olive oil on top.  Add parmesan and season with pepper and salt to taste.  Combine by tossing.
  4. Bake for 30 minutes in the oven or until the potatoes are crisp and brown.
  5. Add butter and allow it to melt.
  6. Garnish with parsley and serve hot.
