Parmesan cheese is one of the tastiest cheeses available and although they may not be in the good books of many, they add taste and texture to our roasted potatoes. Because too much of anything can be unhealthy, we have decided to use only a small amount of cheese in our recipe.

These can include steamed vegetables, salsa and even low fat sour cream.
Garlic Parmesan Roasted Potatoes go great with just anything. You can even take few slices of garlic bread, toasted bread, bun or a bowl of pasta. These yummy potatoes are great for any season.
Preparation time: 10 mins

Total time: 40 mins
- 3 pounds red potatoes, cut into halves
- 5 cloves minced garlic
- 2 tbsp olive oil
- 1 tsp thyme, dried
- ½ tsp basil, dried
- ½ tsp oregano, dried
- 1/3 cup parmesan cheese, grated
- Black pepper and salt to taste
- 2 tbsp unsalted butter
- 2 tbsp parsley, chopped for garnishing
- Take a baking sheet and lightly oil it.
- Preheat over to about 400 degrees F.
- Place potato halves onto the prepared sheet, add herbs and sprinkle olive oil on top. Add parmesan and season with pepper and salt to taste. Combine by tossing.
- Bake for 30 minutes in the oven or until the potatoes are crisp and brown.
- Add butter and allow it to melt.
- Garnish with parsley and serve hot.
